Ingredients
  

For Dough
  • 2 cups whole wheat flour atta
  • 1 tbsp oil
  • Water as needed
  • Salt – a pinch
For Aloo Stuffing
  • 4 medium potatoes boiled & mashed
  • 1 –2 green chillies finely chopped
  • 1 tbsp coriander leaves
  • ½ tsp cumin seeds jeera
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • ½ tsp chaat masala optional
  • ½ tsp amchur dry mango powder
Salt to taste
  • For Cooking
  • Ghee or oil

Equipment

  • 1 A small bowl for ghee or oil
  • 2 A spatula
  • 3 Small plate for dusting flour
  • 4 Potato masher or fork
  • 5 A flat pan or tawa
  • 6 Rolling board + rolling pin
  • 7 A mixing bowl

Method
 

Make the Dough
  1. Add flour, salt, and oil in a mixing bowl.
  2. Add water slowly and knead into a soft, smooth dough.
  3. Cover and rest for 10–15 minutes.
Prepare the Stuffing
  1. Mash boiled potatoes well.
  2. Add green chillies, coriander, and all spices.
  3. Mix properly and taste for salt.
Roll the Parathas
  1. Divide the dough into balls.
  2. Roll a small circle, place stuffing inside, seal edges.
  3. Roll gently into a round paratha (7–8 inches).
Cook on Tawa
  1. Heat tawa on medium flame.
  2. Place the paratha and cook until bubbles appear.
  3. Flip and apply ghee on both sides.
  4. Cook until golden brown spots appear.
