Ingredients
  

For Dough
2 cups whole wheat flour
1 tbsp oil or ghee
1 pinch salt
Water as needed
For Potato Filling
3–4 boiled potatoes (mashed)
1–2 green chilies (chopped)
1 tsp grated ginger
1 tsp cumin seeds
½–1 tsp red chili powder
½ tsp turmeric
1 tsp coriander powder
½ tsp garam masala
Chopped coriander
Salt to taste
Lemon juice (optional)
For Cooking
Ghee or oil

Equipment

  • 1 A mixing bowl
  • 2 A chakla-belan
  • 3 A tawa / skillet
  • 4 A small bowl for flour dusting
  • 5 A spoon for mixing the filling
  • 6 A plate to stack the parathas

Method
 

Prepare Dough
  1. Add wheat flour, salt, and oil in a bowl.
  2. Slowly add water and knead into a soft dough.
  3. Cover and rest for 15–20 minutes.
Make the Aalu Filling
  1. Mash boiled potatoes.
  2. Add spices, green chilies, ginger, coriander, lemon, and salt.
  3. Mix well until smooth and lump-free.
Stuff the Paratha
  1. Take a small dough ball and roll slightly.
  2. Place 1–2 tbsp filling in the center.
  3. Bring edges together and seal.
  4. Flatten gently and roll evenly.
Cook on Tawa
  1. Heat tawa on medium.
  2. Place paratha, cook until bubbles appear.
  3. Flip and apply ghee.
  4. Cook until golden brown and crisp.
Serve
  1. Serve hot with curd, pickle, butter, or chutney.
